Black Bean and Chicken Burrito with Chimichurri

So around here we really love black beans. The kids especially love them! Usually I have been popping open a can flavoring and feeding them to the fam, but I decided it is time to domesticate a bit more and go from "scratch". They are really easy to make you just need to boil them for a while so I prepared them with time. Instead of just boiling them in water I added garlic, garlic salt and parsley, and chicken broth (I get the glass jar kind without msg). You really can't overdo the seasoning to easily because they are pretty hard to take on flavor. Anyway I did about a half pound, had enough for this meal, lunch the next day for the kids, and then I froze about two meals worth. So not only are these beans way more nutritious it is a huge savings! I added chicken to our beans because I had some leftover from a different meal, you can do the same and pan fry, grill, or boil chicken. It could easily be a vegetarian deal though as black beans are FULL of protein!  Anyway the rest of the burrito was pretty basic with our obvious FAVORITE around here, the fresh cooked tortilla, a bed of lettuce, peach salsa (or tomatoes), and then the chimichurri sauce from the other day! Even though it is pretty simple this was a pretty tasty, quick meal!
