So today we had a pizza like could be if it wanted to be burrito. I wasn't sure which way to go with it. For the crust I used a tortilla I like the ready to cook tortillas from Costco but it would be great on a pita kefir dough or any other sort of flat bread/tortilla thing. I made the red sauce out of spaghetti sauce (I use the Rinaldi sauce because even though there is cheese in it, the cheese is actually made from goat's milk) in that sauce I hid some veggies from the husband, I pureed carrots and spinach for a little boost of nutrition. The green sauce is a homeade basil pesto, once again I kind of made my own recipe because I didn't have the pine nuts and I didn't want too much cheese, ok so I did use some parmesan cheese. I know I know... anyway after that comes the black beans. I used beans from the can I know that fresh made beans are more healthy but what's a girl to do right? I added to the beans garlic and a splash of lemon pepper, then I semi-smashed the beans after that I put on tomatoes and cilantro(that I admit were lightly salted). Anyway for the toddler I wraped his like a burrito and for the husband (who is being a real champ) I melted cheese on top and sectioned like a pizza, it looks way more delicious because cheesemakes everything more delicious.
