Hawaiian Hay Stacks

So once again I didn't feel much like cooking (are we seeing a pattern hmm..) Anyway so I made white rice but this time I added some grated carrots to add color and  maybe put a little extra nutrition? Anyway then I made the same teriyaki sauce from last night, only this time I made a smaller batch and I used it as a sauce not a glaze (I didn't boil it first, and I cut the cornstarch) and I cooked frozen chicken breast in the oven. I then made chicken broth and thickened it to my liking and shredded the cooked teriyaki chicken and added it to the broth gravy, I also like to add the sauce from the chicken pan. These are fun because you really can do whatever on them. I put green bell peppers, tomatoes (those are the must have), peach (sounds weird but taste great), a little bit of cheese, and then chow mein noodles. Please note I made the rice into "hay bales" ha. We love these around here, and they are quick! They are also really filling and you can make them really nutritious. As a note I really like to add chives to mine but the husband is not a fan so I don't and didn't have them on hand. Anyway, great go to meal!
