Fish Taco with Peach Salsa

So I know that this is not as intense with veggies but sometimes it is nice to eat food that is good and not necessarily unhealthy. Since starting this challenge I really feel we have been making better choices and adding so much more health to our diet so a break from intense veggie dishes should be fine! Anyway I took the all time favorite uncooked tortillas, cooked them up and put rice on them then added pan fried tillapia (I just took run of the mill bread crumbs <gasp> and fried them in olive oil <another gasp> I actually added a little vegetable oil because sometimes I am not the most skilled frying things in the olive oil.) And topped that off with Peach Salsa, I would have preferred the mango salsa that they had but it was spicier and with the toddler I figured it better to go mild. I Also added fresh chopped cilantro and parsley, because if you have not noticed I am in love with them currently. All in all pretty good. We don't eat a lot of Mexican food around these parts so my husband actually opted for fish and rice topped with ketchup ha ha... you can't win them all!
