So the Balas Family is starting a new lifestyle! We are trying our hardest to eat a healthy diet. We are not on a weight loss program rather just trying to cut out junk and put more nutritious items into our mouths! I will be experimenting with new recipes that are on the healthy side and hopefully are practical for a toddler and baby, meaning non time consuming and edible! Wish us luck and enjoy!

Black Bean Patties
So today I feel really lazy unmotivated to cook, but the toddler and baby are not that great in the kitchen so what do you do? Anyway I found this recipe for black bean croquettes that I thought looked pretty different and tasty. I however am as stated a few times not that great at following recipes so here is what I did. I used 1 and a half cans of black beans and rinsed them off. Then you mash them up with garlic and curry who is surprised?. Then I threw in some fresh cilantro, frozen corn, diced tomatoes, feta, very sneaky thinly diced spinach, then I had that Chilean sauce on hand (you could always do pico de gallo or just plain ole salsa. I mixed that all really well then added bread crumbs(I just eyed the amount of crumbs and I made mine out of pretzels that were all natural, you could buy bread crumbs or make actual crumbs whatev). I mixed it all up and then pinched the dough into smaller sections. The original recipe was for balls but I read the comments and some people had said they made patties to make them stick better and also they would use any leftovers for mexican smashburgers(which I thought sounded really great, especially after trying them). Anyway you take more bread crumbs mix with a little olive oil and then press the black bean "dough" into the bread crumb olive oil mixture, then bake them at 350 degrees until crispy on the outside. Because I made these and am feeling lazy this is all I served on a plate ha ha, but you really could serve these a lot of different ways, I thought they would be great kind of a hamburger style or with a salsa and guacamole or just with a fresh salad. Anyway they were a hit with the kiddos and the husband has yet to see the masterpiece but I am sure he won't complain will like them as well, just be sure to add a lot of flavor because on the website I got it from most of the people said there was not enough flavor. I even put lemon pepper in the mix to jazz it up. Anyway that is my lazy meal I wish it were pizza.
