And once again the white rice was for the husband! Anyway I will probably try a few more of this woman's recipes out on here!
So the Balas Family is starting a new lifestyle! We are trying our hardest to eat a healthy diet. We are not on a weight loss program rather just trying to cut out junk and put more nutritious items into our mouths! I will be experimenting with new recipes that are on the healthy side and hopefully are practical for a toddler and baby, meaning non time consuming and edible! Wish us luck and enjoy!

Tropical Chicken with Spinach Salad and Rice
So I found a great blog with a lot of great healthy recipes on it. She had apricot chicken as one of her recipes over way healthier rice. I thought the picture looked fantastic but I don't like apricots so I made up my own version of her featured recipe. I have frozen fruits that I have been using for smoothies so I put pineapple, peaches, and mangos in about 2 TBS of vinegar and she said honey but I used about 1-2 TBS of agave. Then you let your fruit sit. I browned the chicken and she said to just use s&p but I actually used curry on my chicken(the recipe calls for curry later and I thought why wait!) Anyway then you take the chicken and put it in a dish. You add about 2 cups of chicken broth, add cinnamon, a dash of garlic, a dash of italian seasoning, and then take about 2/3 cup of your fruit that you have soaking puree it until only slighlt chunky and add it to the sauce. Let it all simmer and then add the chicken and the leftover soaking fruit. I topped mine off with a little more cinnamon and then you let it simmer for about ten minutes. We really loved this, I really liked it especially the chunks of fruit soaked in the broth for my baby, she loved it! And what a healthy dish!
