So the Balas Family is starting a new lifestyle! We are trying our hardest to eat a healthy diet. We are not on a weight loss program rather just trying to cut out junk and put more nutritious items into our mouths! I will be experimenting with new recipes that are on the healthy side and hopefully are practical for a toddler and baby, meaning non time consuming and edible! Wish us luck and enjoy!

Pad Thai-ish Dish
(ATTENTION: Before you start reading be warned grammar in this post is especially horrible, kids are not very cooperative today). Anyway you take chicken and put it in a fry pan (you def could do without the chicken but we do like chicken, I have seen recipes that use tofu? but I am not so sure about that ha) anyway you put olive oil in the pan and put garlic and of course curry cook the chicken until it is all the way cooked then put agave on top, turn the heat up and get the sauce sticky so it really coats the chicken (you can also just boil the chicken but I love curry and like the extra flavor). After the chicken is done you take the chicken out and cut it into small strips, but keep the brothy sauce stuff in your pan. Add to it some soy sauce, a little bit of ketchup, agave, and peanut butter. I know it sounds weird but it is good. Anyway you heat the sauce to a boil and it will become really sticky and thick. Take it off the heat and add milk, now here are your choices- I used Kefir milk, because we are trying to be healthier, you can use regular milk or coconut milk is great! You could also do rice milk or even non fat yogurt. Anyway you take the milk add it in until it dilutes your mixture and makes it delicious (this is why I usually don't share recipes... ha ha ha) anyway then you add curry to taste which for me is A TON! and then you put the sauce over rice noodles! This is our favorite dish! For extra pazaz you can squeeze lime on top and sprinkle nut of choice. Also you can scramble eggs on the chicken if you like and that is tasty too!
