So the Balas Family is starting a new lifestyle! We are trying our hardest to eat a healthy diet. We are not on a weight loss program rather just trying to cut out junk and put more nutritious items into our mouths! I will be experimenting with new recipes that are on the healthy side and hopefully are practical for a toddler and baby, meaning non time consuming and edible! Wish us luck and enjoy!

The Verde Verde ( Clever name right?)
MMM... yes I know this is another tortilla meal but no one was complaining around here. First of all I cooked up the tortillas then I put guacamole, chicken, rice, and tomatoes. For the guacamole I used avacado of course, a dash of garlic salt, and then instead of sour cream I used the cream off of my kefir milk, and then added a little bit of lemon juice to add zest and stop from browning. For the green chicken I started pan frying it with a little bit of garlic and olive oil, after tasting the guacamole I realized I was in the mood for lemon, so I decided to make a cilantro lemon chicken. Soo.... after I had already started the chicken I pureed some cilantro, garlic, and lemon juice together. I then topped the chicken with it. I like my chicken really thin and flavorful (of course there is probably no one that likes unflavorful food, I was just saying) anyway so I cut it in half and then into strips, I then doused (spelling?) in lemon pepper, and added diced fresh cilantro, to top it all off I put a little agave in because I like the way it brings the flavor out. Midway through cooking I did empty out some of the watery juice that cooks off the chicken, but I wish I hadn't because I think that would have just made the lemon cilantro flavor of the chicken just burst, so I would def keep that juice to put on the sandwhich. Anyway I then put tomatoes on, and once again for the sweet South American husband I added white rice. This was a HUGE hit! We loved it! This is def a keeper around here! One think too that I think I would have liked it maybe a bit of fresh squeezed lemon on top.... Anyway give it a try! We also did oven fries but I forgot to take a picture. Oh well...
