So the Balas Family is starting a new lifestyle! We are trying our hardest to eat a healthy diet. We are not on a weight loss program rather just trying to cut out junk and put more nutritious items into our mouths! I will be experimenting with new recipes that are on the healthy side and hopefully are practical for a toddler and baby, meaning non time consuming and edible! Wish us luck and enjoy!

Veggie Pizza Quesadilla
So this little recipe is AMAZING! I took tortillas (the cook fresh kind) and put blue cheese dressing on (I am still trying to not go way overboard on cheese and dairy but this dressing is actually made with Kefir and was delicious). Then I cut potatoes and pan fried them in olive oil, garlic salt, and a touch of italian seasoning and put on as my next layer. After that I sliced tomatoes and spinach (I didn't even hide it this time and the husband and toddler ate it up) and put on top, I put it in the oven on broil for a few minutes just to soften the veggies and make the flavors combine a little more if that makes sense?. The green sauce is actually a spinach pesto, that was excellent. It was easy to make and a fabulous alternative to basil pesto. I put the spinach leaves in only a couple of basil leave (my little plant has yet to produce more delicious leaves) then garlic, a touch of vinegar, olive oil, a sprinkle of parmesan, and a bit of water. I liquified it up and dabbed it on top (I did this after it was out of the oven). This started out as a pizza but I didn't want to take the extra time to crisp the tortilla after I had to cook it as well (come on I am on a time limit), so I found folding it over was way easier to eat, and it was OUTSTANDING!!
