So the Balas Family is starting a new lifestyle! We are trying our hardest to eat a healthy diet. We are not on a weight loss program rather just trying to cut out junk and put more nutritious items into our mouths! I will be experimenting with new recipes that are on the healthy side and hopefully are practical for a toddler and baby, meaning non time consuming and edible! Wish us luck and enjoy!

Potato Spinach Fritatta with Spinach Pesto
So one time I heard something about a fritatta and I thought hmmm I wonder what it is (besides a very fun word!) So I looked it up and hey you know what it was pretty delicious I found a recipe that called for what I had on hand. I wanted to finish off the week's veggies because we all know they go bad quick. So anyway because it is Friday and I have a million things to do I made this super quick pretty tasty dish. The basic is you take potatoes thinly sliced and cook them (sautee? them) the recipe just says potatoes and olive oil but I seasoned my potatoes with italian seasoning and garlic, I was happy I did too because even as much as I seasoned a few bites lacked a bit of burst (does that make sense?) Anyway then you add your other softer veggies, notice how I never use onion, the husband pleaded that I never resort to it ha ha. Anyway you take your mixture of milk (I once again opted for kefir milk) and eggs pour over the top and sprinkle with cheese ( I litterally sprinkled because I am trying to stay away from it. I actually wished that I had feta on hand because that would have been a tasty little edge!) Anyway then you leave it to cook. Look at the recipe link for specifics, but it was pretty tasty! To top it off because I still had some spinach I made another round of spinach pesto because can anyone ever eat too much pesto? No... And as a side note the baby loved this! And it was so easy to eat she really went to town! Anyway... Wish me luck for the weekend on my healthy voyage, I already know I am in trouble because the town days in Utah are in full swing and I have my little fat loving heart set on some curly fries!! But the important thing is I am eating and feeding to my family more veggies!
